Spiced Chocolate Tofu Mousse

Spiced chocolate tofu mousse is easy and delicious! In fact, it’s so good, you’ll forget you’re getting all the health benefits of tofu, and your guests won’t know that this quick and decadent dessert is good for you.

Tofu is rich in calcium, is an inexpensive source of protein, and is so versatile that it can be used for main dishes, dips and desserts. Isoflavones, a group of bioflavonoids found more highly concentrated in soy than in any other food, are potent antioxidants that help protect against heart disease and other decrease the risks. The amino acids found in soy reduce levels of "bad" cholesterol and triglycerides.

12 ounces silken soft tofu at room temperature, drained (Must use silken soft tofu for this recipe)
3/4 cup good quality bittersweet chocolate chips or bar broken into pieces
1/2 cup warmed soy, rice, almond or hazelnut milk
1 teaspoon good quality vanilla
1/2 teaspoon cinnamon
1/2 teaspoon cumin
1/4 teaspoon cayenne

Melt chocolate in a metal or glass bowl over a small pot of simmering water, being careful not to let the bottom of the bowl touch the water. Let the chocolate melt slowly, and stir until completely smooth.

In a food processor, combine tofu, melted chocolate, warmed milk, vanilla and spices. Blend until smooth. If there are any lumps, push mixture through a fine-mesh strainer or sieve, using a rubber spatula. Ladle into individual serving bowls. Can be served warm, or chilled and served later.
