Rocky Love Cookies

These cookies are from La Duni Latin Cafe in Dallas.
Cooking time: 12 minutes
Makes: 2 dozen.

1/2 cup bitter sweet chocolate
1/2 cup semi sweet chocolate
3/4 cup unsalted butter
4 eggs
1 1/2 cups sugar
1/2 cup all purpose flour
3/4 tsp. baking powder
1 tsp. salt
1/2 cup toasted walnuts
1/2 cup toasted pecans
1 cup chocolate chips
1/2 tsp vanilla extract

Place the bittersweet and semisweet chocolates with the butter in a small sauce pan and melt, stirring constantly at low heat.

In a mixer with whip attachment, whip the eggs and sugar to ribbon stage. (light and fluffy) at medium to high speed. Bring down to low speed, add vanilla extract, and melted butter and chocolate mixture, making sure to fully incorporate all ingredients.

In a separate bowl sift together flour, baking powder and salt. Fold in the flour mixture into the egg mixture till just combined.Add the toasted nuts and chocolate chips, combining all the ingredients.

Scoop out, with a small ice cream scooper or a table spoon on to a parchment-lined cookie sheet, and bake at 350 for about 12 minutes. Do not over bake. These are chewy, gooey cookies.
