Chocolate Praline Pie
Served with Messina Hof Private Reserve
Papa Paulo Port
3¾ cups chopped semisweet chocolate
2 cups butter
2 cups heavy whipping cream
8 egg yolks
1½ cups confectioners’ sugar
¾ cup Messina Hof Private Reserve Papa
Paulo Port
2 cups chopped pecans
2 pastry shells (9 inches), baked
In a double boiler, melt chocolate and
butter with cream. Whisk eggs and slowly add to chocolate
mixture, whisking constantly. Whisk in the confectioners’
sugar and wine. Add pecans. Pour into pastry shells. Cool.
Garnish with strawberries and whipped cream.

Chocolate Pate
1½ pounds semisweet chocolate, chopped
1¾ pounds butter, cubed
½ pound confectioners’ sugar
½ cup Messina Hof Papa Paulo Texas Port
9 eggs, beaten
In the top of a double boiler, melt
chocolate and butter. Whisk in the confectioners’ sugar and
wine. Slowly add eggs, whisking constantly. Pour into
buttered miniature loaf pans; cool. Store in the
refrigerator. Slice like pâté to serve.
