Popular Pairing Created at Atlanta’s Mosaic Restaurant



 
 


One night not long ago, Executive Chef Darrell Rice of Atlanta restaurant Mosaic was approached by a group of guests at the restaurant bar. Please, the chocophiles urged, create a chocolate dessert rich enough to satiate their intensely chocolate-craving palates. Mousses, puddings and cakes were just not enough.

Using his experience as a pastry chef, Rice came up with his now signature and most sought-after dessert, the Chocolate Pâté. A luscious combination of chocolate mellowed by cream and a hint of silky Grand Marnier, this dessert is definitely intense enough to satisfy any chocolate connoisseur. Rice emphasizes that, with so few ingredients in the dessert, the depth of the taste is totally dependent on the quality and type of chocolate. Each ingredient needs to be of the highest quality.

To compliment the restaurant's signature dessert, Mosaic bartenders developed the perfect compliment. Chocolate Port is a mix of Godiva chocolate liqueur and Fonseca Bin 27 ruby port. Deep chocolate flavors, silky consistency and an addictive kick, make this drink a not-to-be missed signature at Mosaic.  Pair it with the Chocolate Pate, and you have an ecstatically delicious end to your meal.
